La historia de Gaby's (en honor al perro de Bryan Wilson, fundador del proyecto) comenzó a orillas del río Danubio. Lo que empezó como un local de ambiente cercano, rápidamente se convirtió en un referente.
El éxito nos impulsó a afrontar un nuevo desafío frente al mar Mediterráneo. En este camino se sumó Martín Candi, quien comenzó en Budapest y hoy lidera este local junto a Bryan.
En nuestro tercer año, Gaby's Sitges es el reflejo de la pasión compartida. Trabajamos para que cada detalle marque la diferencia y la experiencia vaya siempre mucho más allá de la comida.
Gaby's Sitges was born on February 8, 2023facing the Mediterranean sea, as the natural continuation of a dream that began years before on the banks of the Danube.
Name Gaby's it is not casual: it is the name of the dog Bryan Wilson, the creator of the original concept and one of the founders of the project. In 2021, Bryan opened Gaby's Budapest, a restaurant located next to the Danube river that quickly became a reference point for its atmosphere, its gastronomic proposal and a close understanding of the restoration.
The success of that first Gaby's was the impetus to take it a step further and to face a new challenge: to open a second restaurant, this time next to the sea. Thus was born the idea of bringing the concept to Sitges, keeping the original essence and adapting it to a mediterranean environment only.
In this route, also part Martin Candiwho began his path as a part of the kitchen team of Gaby's Budapest. With the passage of time, this experience led to a professional relationship based on trust and a shared vision. Years later, Bryan and Martin resumed contact with a clear goal: to give life together a new Gaby's, combining experience, passion and the desire to continue to grow.
Behind every service, every dish and every detail, there is a committed team that shares the same vision and the same values. A group of people who work with passion, dedication, and consistency, and that makes Gaby's Sitges is what it is today: a place where the experience goes far beyond the food.
Today, Gaby's Sitges enters her the third year of life, consolidating its position as a restaurant, where the good food, the relaxed atmosphere and the close attention go hand in hand. Every dish and every detail reflected the course of that journey: from the Danube to the Mediterranean, from a first local to a project that continues to evolve day-to-day.
